This one's nice and straightforward. It just means: 👉 I can’t believe that... ALTHOUGH, having just sung its praises, it is often followed by the dreaded subjunctive... But (plot twist!) you’ll also hear it with the indicative A LOT in everyday Mexican Spanish.
👍 My completely unsolicited rule of thumbSubjunctive reacts to the fact. Indicative states it directly. Lo logré.
I did it. No puedo creer que lo haya logrado.
I can’t believe I did it.
Ya llegaste.
You’re here. Me alegra mucho que ya hayas llegado.
I’m so glad you’re here.
Siempre hace lo mismo.
He always does the same thing. Cómo me molesta que siempre haga lo mismo.
It really annoys me that he always does the same thing.
Un latte cuesta cien pesos.
A latte costs 100 pesos. Es increíble que un latte cueste cien pesos.
It’s unbelievable that a latte costs a hundred pesos.

🌪️ When to whip it out

Whenever something surprises, shocks, annoys, or impresses you:

No puedo creer que cueste tanto.
I can’t believe it costs so much.
No puedo creer que te acordaras.
I can’t believe you remembered.

You’ll also hear it with the indicative A LOT in everyday Mexican Spanish:

No puedo creer que llegamos tarde de nuevo.
I can’t believe we were late again
